Back To Training
This is Brooke beside one of the smaller rocks at Rock Town on Pigeon Mtn. this past Sunday. Our trip wasn't as long as we wanted it to be but we enjoyed a nice little hike.
Today was our first class back with our trainer, Lisa. Brooke had been in Fla. and I had been sick so finally we got to start back. We did pretty well. We worked our arms and abs today. Of course, as per usual, my arms and chest will probably be screaming tomorrow. ;)
We went and got groceries and I made Crockpot Chicken & Rice. It was the first time I ever made it. It calls for five ingredients:
1) 3-4 boneless, skinless chicken breasts
2) 2 cans of Cream of Chicken Soup
3) 2 packages of (dry) Italian seasoning
4) 1 package Cream Cheese, softened
5) Yellow Rice
Add all ingredients (minus chicken & rice) to your crockpot and stir together. After stirring add your chicken. Put your crockpot on low and cook all day long. When you're ready to eat, cook your rice as described on rice package, then serve crockpot chicken over the rice.
You can actually have it with or without the rice. And after a couple of hours I cut up my chicken into small slices.
Cain came over and had supper with us tonight (a real treat!) and all of us really, really loved the meal. :) I served it with homemade sourdough bread. It was yummy!
